Homemade Cottage Pie
Try this comforting Cottage Pie, perfect for a night in with the family!
Ingredients:
1 tbsp olive oil
1 onion, finely diced
2 carrots, finely diced
1 celery stalk, finely diced
1 garlic clove, minced
500g One Stop lean beef mince
1 tbsp tomato puree
400g tin One Stop Italian chopped tomatoes
1 beef stock cube
100g peas
1kg white potatoes
50g One Stop unsalted butter, cubed
Method:
- Bring a large pan of salted water to the boil and in a large frying pan, heat the olive oil. Fry the onion, carrot, celery and garlic until softened, then add the beef mince. Turn up the heat for 4-5 minutes and fry until the mince is browned and cooked through.2.
- Peel and boil the potatoes for 20 minutes. Drain the water and leave for 10 minutes. Preheat the oven to 180°C. Add the tomato puree, tinned tomatoes, stock cube and salt and pepper to the mince mixture. Add 400ml of water and bring to a boil. Simmer for 15-20 minutes. Add the peas for the last few minutes.3
- Mash the potatoes well and add the salt and butter and mix together. Pour the mince mixture into an ovenproof dish and top with the mash. Bake in the oven for 20-25 minutes or until piping hot and golden. Serve and enjoy!
