Coronation Chicken Sandwich
A classic British dish perfect for a light lunch or summer picnic and can be customised to your taste.
1 tsp medium curry powder
4 tbsp One Stop light mayonnaise
4 tbsp One Stop 0% fat Greek-style yogurt
1 tbsp lime juice
1 tsp finely grated fresh ginger
2 tbsp mango chutney
small handful coriander
4 roast (cooked) One Stop chicken breasts, slices into small pieces
50g bag salad leaves
8 slices white bread
Place a medium saucepan one a medium heat and add the curry powder. Toast for a minute until the powder turns very slightly darker and is fragrant. Set aside until cooled.
Combine the toasted curry powder with the mayonnaise, yoghurt, lime juice, ginger, mango chutney and coriander in a mixing bowl. Add a sprinkle of salt and pepper and add in the chicken pieces.
Spread the filling evenly on your slices of bread. Serve with a side of salad leaves.
