Make this easy cheesy omelette that’s not only quick to make but also super healthy!
Ingredients:
2 large eggs
2 tablespoons milk
Salt and pepper, to taste
1 tablespoon butter
100g diced mixed vegetables (such as bell peppers, onions, mushrooms, and tomatoes)
50g grated cheese
You can also add one of the following meat's to further bulk it out (Optional)
100g Sausage
100g Ham
Method:
1. In a small bowl, beat the eggs with the milk, salt, and pepper.
2. Heat the butter in a small frying pan over medium heat. Add the diced vegetables and cook until they are tender, about 5-7 minutes.
3. Pour the egg mixture over the vegetables in the pan. As the eggs begin to set, lift the edges of the omelette with a spatula to let the uncooked egg flow underneath.
4. When the eggs are almost cooked through, sprinkle the grated cheese over one half of the omelette.
5. Carefully fold the omelette in half and continue cooking until the cheese is melted and the omelette is cooked through.
6. Slide the omelette onto a plate and serve hot.
