Step 1
In a small bowl, beat the eggs with the milk, salt, and pepper.

Heat the butter in a small frying pan over medium heat. Add the diced vegetables and cook until they are tender, about 5-7 minutes.

Pour the egg mixture over the vegetables in the pan. As the eggs begin to set, lift the edges of the omelette with a spatula to let the uncooked egg flow underneath.

When the eggs are almost cooked through, sprinkle the grated cheese over one half of the omelette.
