Rainbow Coleslaw
This delightful side combines shredded red cabbage, carrots and mayonnaise.
Ingredients:
200g One Stop red cabbage
2 One Stop carrots, grated
1 sliced spring onion
juice of ½ lemon
150g light mayonnaise
Method:
- Finely shred 200g red cabbage and put in a bowl with 2 grated carrots and 1 sliced spring onion. In a separate bowl, mix together the juice of ½ lemeon and 150g light mayonnaise . Stir through the veg to coat. Cover and chill for at least 30 mins before serving. Will keep for up to 2 days covered in the fridge.
