Ingredients:

2 One Stop garlic cloves
1 whole Courgettes, sliced
8 One Stop Cherry Tomatoes
2 One Stop tbsp olive oil
2 One Stop salmon fillets (about 150g each)
squeeze of lemon juice

Method:

1. Preheat the oven to 200°C/fan180°C/gas 6. Place the courgettes, garlic and tomatoes in a baking tray and drizzle with olive oil, season with salt and black pepper. Place in the oven for 20 minutes.

2. Now lay the salmon fillets in the middle of the vegetables. Season the salmon with a sprinkle of salt and pepper and squeeze over the lemon juice. Return to the oven for 10-12 minutes, until cooked through. Serve and enjoy!
