Pepperoni is a type of highly seasoned and spicy cured meat, most well known for being a very popular pizza topping. It is known for its distinctive red colour (which comes from paprika and curing salts), bold flavour, and slightly spicy kick. After curing, the meat is stuffed into casings and left to air-dry and age, resulting in the distinctive taste and texture of pepperoni.
Perfect for pizzas, flatbreads, and sandwiches; its oil release adds rich flavour and an appetising sheen during cooking. It crisps beautifully when baked!
