Preparation Guidelines 1. Remove chicken from bag and pull the legs out to open the cavity. 2. Rub softened butter over the skin, then season generously with sea salt and cracked black pepper. 3. Take one lemon and prick it all over, alongside one small bunch of mixed herbs, and place both inside the chicken cavity. 4. Place the chicken in a deep roasting tray, and cook according to the pack instructions. 5. Baste halfway through cooking. 6. Once cooked remove from oven and rest for 15 – 20 minutes before carving. 7. Use the flavoursome Juices from the chicken to make the perfect gravy. Tip Retain cooked chicken juices to make gravy or for the perfect roast potatoes why not toss in the chicken juices before roasting in the oven.

Oven cook: – Remove all packaging. – Place in a roasting tin. – Place in the centre of a pre-heated oven and cook for recommended time on front of label, basting occasionally. – If breast browns too quickly cover with foil. 200°C/Fan 180°C/Gas 6, 40 mins per kg + 20 mins Caution To avoid cross contamination, do not wash raw poultry and use separate chopping boards and utensils for raw poultry and ready to eat foods.
