Spice up your weekday dinner with these tasty Beef Tacos.
400g beef mince
1 tbsp Cajun seasoning
1 red onion, finely sliced
3 tbsp olive oil
2 whole tomatoes, diced
100g grated cheese
1 garlic clove, sliced
3 peppers, sliced
½ iceberg lettuce, finely sliced
1 red chilli, finely sliced
8 mini plain tortilla wraps
- Heat 3 tbsp oil in a drying pan and fry the beef mince for 5 minutes or until brown. Add in the cajun seasoning and a sprinkle of salt and pepper to season.
- Again heat 1 tbsp oil in a large frying pan over a high heat and fry the peppers and onions for 10-15 mins until softened. Stir in the garlic and fry for 2 mins until lightly golden. Season with pepper and tip out onto a plate.
- Meanwhile, dry-fry the tortillas in a separate frying pan over a high heat for 30 secs each side until warmed. Wrap in foil to keep warm.
- Stir the peppers and onions into the beef and heat through for 1-2 mins. Assemble the tacos by adding the beef mix, diced tomatoes, lettuce and finish with a handful of grated cheese. Serve and enjoy!
