
Chicken Lettuce Wraps

Ingredients:
1 tbsp olive oil
2 cloves garlic, minced
1 small onion, finely chopped
1 red bell pepper, finely chopped
1 medium carrot, grated
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp ground ginger
1/2 tsp chilli flakes (optional)
8–10 large lettuce leaves (e.g., iceberg or romaine)
2 spring onions, sliced (for garnish)
Sesame seeds (for garnish, optional)
Method:
Step 1 – Cook the chicken:
Heat olive oil in a large frying pan over medium heat.
Add the chicken and cook until browned and fully cooked, breaking it into small pieces as it cooks.
Step 2 – Add the vegetables:
Stir in the garlic, onion, red pepper, and carrot.
Cook for 3–4 minutes until the vegetables are soft.
Step 3 – Season the mixture:
Add soy sauce, hoisin sauce, sesame oil, ground ginger, and chilli flakes (if using).
Stir well and cook for another 2 minutes to let the flavours combine.
Step 4 – Assemble the wraps:
Spoon the chicken mixture into the centre of each lettuce leaf.
Step 5 – Garnish and serve:
Sprinkle with sliced spring onions and sesame seeds if desired.
Serve immediately and enjoy!
