Ingredients:

4–6 romaine lettuce leaves
6 hard-boiled eggs
1 green onion, finely chopped
1 tbsp finely chopped shallots
1 tbsp finely chopped dill pickles
1/4 cup mayonnaise
1 tbsp honey Dijon mustard
1 tsp tarragon
Salt and pepper, to taste

Method:

Step 1: Cook the eggs
Place eggs in a saucepan and add enough water to cover them.
Bring to a boil, then reduce to a high simmer and cook for 10 minutes.
Run the eggs under cold water, then peel them.

Step 2: Prepare the egg salad
Mash the eggs in a bowl using a fork or whisk.
Add the green onion, shallots, dill pickles, mayonnaise, mustard, tarragon, salt, and pepper. Mix everything together well.

Step 3: Assemble the wraps
Spoon the egg salad onto the romaine leaves.

Step 4: Serve and enjoy</strong
Eat immediately or store in the fridge for a quick meal later!
