Garlic Mash Potato Bake

Ingredients:
Butter (for frying)
1 garlic clove, finely chopped
140ml single cream or milk
25g dried white breadcrumbs
25g grated gruyère cheese
2 sprigs of thyme, leaves stripped
Method:
STEP 1
Cook the potatoes in a big pot of boiling water for about 15 minutes until they’re soft. Drain them well. Put the pot back on the heat, melt some butter, and gently cook the garlic for a minute until it’s soft. Then, pour in the cream or milk and warm it up. Put the potatoes back in the pot and mash them until they’re nice and smooth.
STEP 2
Preheat your oven to 180°C (fan 160°C, gas mark 4). Spoon the mashed potato mixture into a baking dish that’s about 20 x 30cm. Sprinkle breadcrumbs, cheese, and thyme over the top. You can prepare up to this step the day before and keep it in the fridge, or freeze it for up to a month. Bake for 15 minutes until the breadcrumbs are crispy and the cheese has melted. If cooking from frozen, bake for 1 hour and 10 minutes.
