2 burger buns
2 small chicken breasts
1 small red onion
Iceberg lettuce
1 egg
1 tbsp dijon mustard
1 tbsp lemon or lime juice
1 tbsp olive oil

1. Heat up the olive oil in a large frying pan. Generously Season the chicken breast with salt and pepper. Sear the chicken on a high heat for 1-2 minutes each side. Cover the pan with a lid and lower the heat. Leave to cook for about 10 minutes.

2. Now time to prepare the sauce. Add the egg, mustard, lemon/lime juice and salt and pepper into a blender and pulse until you have a smooth sauce.

3. Toast your buns in the toaster until crispy. Spread a tablespoon of mayonnaise on the bun and add the lettuce, onion and chicken to the bun. Finish by adding a small amount of cranberry sauce on top of the chicken. Serve immediately!
