
Peri-Peri Roast Chicken
Add some spice to your summer menu with this mouthwatering Roasted Peri-Peri Chicken, perfect for a leisurely al fresco meal under the sun; marinated in fiery peri-peri sauce and roasted to golden perfection, it’s a dish that’s guaranteed to bring a touch of heat and flavour to your summertime gatherings.
Ingredients:
1tbsp Paprika
1tbsp chilli flakes
1tbs Cajun seasoning
A dash of One Stop olive oil
2 crushed One Stop garlic gloves
1tsp sea salt
1tsp black pepper
A squeeze of lemon
Method:
1. Start by placing the spatchcoked chicken into an oven dish, now add the olive oil, paprika, chilli flakes, Cajun, garlic, salt and pepper. Rub all of the seasonings into the chicken until covered. Cover the dish with cling film and leave in the fridge to marinate for at least an hour. Top tip: we recommend marinating the chicken overnight to give it that extra bit of flavour.
2. Heat a cast iron skillet on high heat and add a dash of olive oil. Place the chicken into the pan and let the skin crisp for 5 minutes or until browned. Then, place back into the oven dish and cook for 20-25 minutes at 180°C degrees to ensure the chicken in cooked through.
3. Finally squeeze a fresh lemon over the top and serve.
