
A fresh and tasty salad that’s perfect on its own or with grilled meat or veggies. Great with toasted pittas for a quick lunch!
READY IN 20 MINUTES SERVES 4
Ingredients:
25ml extra-virgin olive oil
Juice of ½ lemon
1 red pepper, thinly sliced
1 green pepper, thinly sliced
4 salad tomatoes, sliced
½ cucumber, deseeded and sliced
1 red onion, thinly sliced (or use white, brown, or spring onions)
100g feta cheese, cut into cubes
100g black olives
A pinch of dried oregano
Juice of ½ lemon

Method:
- In a large bowl, whisk together the olive oil and lemon juice.
- Add the peppers, onion, tomatoes, and cucumber. Toss everything gently to coat.
- Divide the salad into bowls. Top with feta cubes and olives.
- Sprinkle with oregano and serve.
