Ingredients:

1 One Stop red onions, cut into strips

2 red peppers, sliced into strips

1 yellow pepper, sliced into strips

2 garlic cloves

2 One Stop medium tomatoes, halved

2 One Stop tbsp olive oil

4 One Stop salmon fillets (about 150g each)

squeeze of lemon juice

Method:

  • Preheat the oven to 200°C/fan180°C/gas 6. Place the onions, peppers, garlic and tomatoes in a baking tray and drizzle with olive oil, season with salt and black pepper. Place in the oven for 20 minutes.
  • Now lay the salmon fillets on top of the vegetables. Season the salmon with a sprinkle of salt and pepper and squeeze over the lemon juice. Return to the oven for 10-12 minutes, until cooked through. Serve and enjoy!
