
Welsh Cakes
Celebrate the spirit of St. David’s Day with these delightful Welsh cakes, filled with plump and juicy sultanas for a burst of sweetness in every bite; whether enjoyed with a cup of tea on a brisk afternoon or shared with friends and family as part of a festive celebration, they’re a beloved Welsh tradition that’s meant to be savoured and shared with loved ones.
Ingredients:
60g sultanas
1 egg, beaten
6 tbsp milk
250g plain flour
½ tsp baking powder
pinch of salt
100g butter, diced
Method:
1. Sift together the flour, baking powder and salt into a large bowl. Add the butter and rub in with your fingers until the mixture resembles breadcrumbs. Add the sugar and sultanas and mix. Add the egg and sufficient milk to bind the mixture together.
2. Roll out the mixture to about a 1cm thickness. Using a pastry cutter, cut into round shapes until you’ve used up all the mixture.
3. Heat a lightly greased frying pan. Cook the cakes for about 3-4 minutes on a gentle heat. Serve cakes warm and enjoy!
