1 tbsp One Stop olive oil

1 small One Stop red onion, chopped

2 One Stop garlic cloves, smashed and peeled

Salt and ground pepper

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1 One Stop Italian chopped tomatoes

1/2 teaspoon sugar

1 tbsp One Stop unsalted butter

1 tbsp One Stop green pesto

Handful of grated cheese

Red-pepper flakes, to serve

  1. In a medium saucepan, heat up the oil over a medium heat. Add the onion and garlic and season with salt and pepper. Cook until onion has softened.
  2. Stir in the cumin and coriander. Add tomatoes, sugar, and 1 cup water and cook for about 5 minutes. Now using a blender puree the soup until smooth and strain through a sieve.
  3. Stir in butter and season with salt and pepper. Serve soup with a sprinkle of red chilli flakes, some cheese and spoonful of pesto.
