6 washed lemons
125g granulated sugar
1 ltr sparkling water
1. Peel the lemon zest off with a peeler, then juice the lemons. Add the lemon zest to a saucepan with the sugar and 400ml of water.
2. Slowly bring the pan to a boil and stir occasionally. When the mixture is boiling add the lemon juice in and remove from the heat and leave out to cool.
3. Strain the mixture into a jug and mix with the sparkling water.
4.Serve with Ice and a slice of lemon.
